Golbari Kosha Manso is a famous dish of kolkata.The word ‘Kosa’ is similar in meaning to ‘Bhuna’,which involves Slowly cooking a gravy over low flame for a very long time to get a rich,dark brown gravy.This Kosa Manso is served with paratha or pulao or rice.I am going to show you how to make this famous dish at home.

Ingredients:
600 gm chicken
1 big onion paste
1 sbig size slice onion
2 tsp ginger paste
2 tsp garlic paste
3tsp curd
1 pinch turmeric powder
1 tsp red chilli powder
2 tsp salt
½ tsp sugar
1 cup liquor tea
1 cup mustard oil
1/2tsp nutmeg & mace powder
1 tsp garam masala powder

Method:
In a bowl take chicken,onion paste,1tsp garlic paste,½ tsp ginger paste.1 tsp salt ,1 pinch turmeric powder,3 tsp curd .mix well and marinate for 30 minutes.
In a kadai heat 1/2 cup oil and add sliced onion.fry well on high to medium heat and make beresta.cool it and make a smooth paste using required water.
In another kadai heat oil add 2 cardamom,1 cinnamon,4-5 long,4-5 black paper.after 20 seconds add 1 tsp ginger paste,1/2tsp garlic paste,add a few drops of water and saute it until it’s raw smell goes away.
Now add beresta paste.saute it, add sugar and cook on low flame 1-2 minute.
Now add 1 tsp red chilli powder.Cook continuously on low flame for 3-4 minutes.
Add marinated chicken only .cook for 5 minutes.After cooking add marinated masala.
Cook for a few seconds and cover.
Cook for more than 10 minutes on low flame.
Now add 1 cup liquor tea.mix well.
Add nutmeg and mace powder.cook again on low flame for few minutes
When you are happy with the colour add salt and garam masala powder ,mix well and cook for 2 minutes.
switched off the flame ,serve hot with paratha or pulao.
