How to Make Air Fryer Lechon Kawali
✅Ingredients
3-4 pounds pork belly
1 head garlic, pounded
2 tablespoons salt
1 tablespoon peppercorns
2 pieces bay leaves
Water
1 teaspoon vinegar
Rock salt
✅Instructions
In a large pot, combine pork belly, garlic, salt, peppercorns, bay leaves, and water. Bring to a boil, skimming scum that floats.
Lower heat, cover, and simmer for 1 to 1 ½ hours.
Remove pork belly from the pot and place on a wire rack. Allow to cool touch.
Using the tines of a fork or a knife, poke holes into the skin without piercing the flesh.
Wipe the pork dry. Brush the skin with vinegar.
Cover all sides with rock salt. Cover skin with a thin layer of salt.
Refrigerate overnight to completely cool and dry. Scrape off the salt.
Preheat air fry at 360F/180C for 5 minutes.
Once heated, place the pork belly in the air fryer basket.
Cook at 360F/180C for 15-20 minutes.Increase temperature to 400F/200C cook for 30-40 minutes.
Remove the crispy pork belly from the air fryer. Let rest for 5 minutes then cut into serving pieces.
