• Ingredients: seasoning for cool dishes Ingredients for Chilli oil: 200 grams of cooking oil, 4 slices of ginger, 5 sections of green chinese onion, 2 pieces of bay leaves, a little bit of cassia, star anises and szechuan peppercorns, 50 grams of chilli powder, a little bit of white sesame, half spoon of salt, 1 spoon of white sugar, 1 spoon of strong liquior. Please check the amount of ingredients in the video. Ingredients for Seasoning: get a little bit of fennel, szechuan peppercorns, cassia, bay leaves, star anises, jerusalem artichoke, tsaoko, a little bit of chicken powder and salt, put them in water and cook it for a bout 15 mins. Then sieve it and cool the liquid. Please check the amount of ingredients in the video. About the rest ingredients such as vinegar, peanut butter or garlic paste, we can just add water in it to dilute it. Ingredients for Pea jelly: in size we use 350ml of white pea flour to go with 5 cups of water with 350 grams each. In weight we use 250 grams of white pea flour to go with 1750 grams of water. • The temperatures in the recipe are all in celsius degrees.
