Hello, I'm Cassandre, and today I'm going to share a popular pastry in Long Island and New Jersey: Philly Fluff Cake.

Philly Fluff Cake, originated from a bakery in Long Island, New York, is also a popular pastry in New Jersey. The main reason why it's so popular is that it's a cross between a pound cake and an angel food cake. It has a rich, buttery flavor and tastes very soft, and we think it's really delicious.

Although it looks like an unusual cake, what we want to share is the way it is made.
In traditional cakes, the butter and sugar are beaten until fluffy and pale, then the eggs are added to emulsify the cake. Philly Fluffy Cake is made the other way , mixing the fat with the flour first, then adding the eggs at the end, which is also known as the "reverse creaming method", which is advantageous in that it prevents gluten from coming out of the flour, and there is no so-called over-mixing or under-emulsification, which is also the main reason why the cake is so soft and supple.

How do you make Philly Fluff Cake?
Here's how to make Philly Fluff Cake and the recipe:

📍 cut mold size: top diameter 16cm, bottom diameter 14cm, height 8.5cm chiffon chimney molds

✎ Ingredients
Vegetable shortening 38g, room temperature
Cream cheese 90g, room temperature
Unsalted butter 46g, room temperature
Medium Flour 100g
Sugar 165g
Baking powder 2g
Salt 1g
Whole egg 138g, beaten
Rum 4g
*Powdered Sugar 10g, for decoration

✎ Directions
1. Take a tablespoon of softened butter and spread it on the inside of the baking dish, then sprinkle it with a layer of flour, and shake off the excess powder.
2. Sift the sugar, flour, and baking powder together, and add the coarse salt to the mixing bowl and mix well.
3. Beat softened cream cheese, shortening and unsalted butter on medium speed for 2 to 3 minutes, until fluffy and pale.
4. Add dry ingredients and mix on low speed until all dry ingredients are coated with grease (about a minute), then beat on medium speed for about 2 minutes.
5. Add rum, then add eggs in three batches, mix on medium speed for about 30 sec., then add the next batch of eggs.
6. Pour the batter into the baking mold and spread it with a spatula, then use a spoon to smooth it out.
7. Preheat the oven to 180°C and bake for 50-55 minutes or until golden brown. Remove the cake from the oven and let it rest in the mold for 5 minutes before unmold, then invert it on a wire rack to cool completely.
8. sprinkle powdered sugar on top of the cake before serving, keep it at room temperature for 3 days (sealed) or refrigerate it for 5 days, serve it cold or bake it at 160°C for 5~8 minutes.
