Potato Gnocchi with Burnt Butter and Sage

Let's talk gnocchi. This is a method that Gannaro Contaldo introduced me to after many years of cooking the potatoes in water only to add a bunch of flour to counteract the wet potato. This recipe is awesome. Be sure to cook it.
