Easy Lamb Kidney Curry (Fiji Style) :

Ingredients:

• 12 Lamb Kidneys
• 4 Tbsp Oil
• 1 Tsp Turmeric
• 1 Large Onion Chopped
• 2 Tbsp Curry Powder
• Salt To Taste
• 1 Tsp Chilli Powder ( or According To Taste)
• 2 Tbsp  of Grated Garlic
• 1/2 Tsp Cumin Seeds
• 1/2 Tsp Mustard Seeds
• 2 Tbsp White Vinegar
• 2 Sprigs of Chopped Curry Leaves
• 1 Tsp of Minced Ginger
• Some Hot Water
• A Dish With Cold Water

Method:

1) Take one kidney at a time and cut it into small pieces. Repeat this with the remaining pieces.
2) Take the with vinegar, add it to the dish with cold water and give it a quick mix.
3) Add the kidneys to the dish with vinegar water, give a quick mix and put it aside for 10 minutes.
4) After 10 minutes, drain all the liquid. The best way to do this is using a colander. Put the colander in the sink, pour the kidney pieces with the water . Now turn the tap on and rinse the kidney well. Put the colander in the dish and let it drain well.
5) To make the kidney curry, put a pan pot on medium heat, add oil and heat it for 30 seconds.
6) When the oil gets hot, add cumin and mustard seeds, give a mix and cook it for 30 seconds.
7) After 30 seconds, add chopped onions and curry leaves, give it a mix and cook it for 2 - 3 minutes or until the onions gets a light brown colour.
8) Add chopped kidneys, 1 teaspoon of salt, chili powder, turmeric and curry powder .
9) Give it a good mix and add enough hot water just to cover the kidneys, mix it well, put a lid on leaving a small gap for the steam to escape and bring it to a boil.
10)  When it starts to boil, give it a mix,  put the lid back on leaving a small gap, lower the heat and cook it for 15 to 20 minutes or until most of the water has absorbed, stirring it twice during cooking.
11) After 20 minutes, add garlic and ginger , give it a mix, put the lid back on leaving a small gap and cook it for a further 10 minutes.
12)  After 10 minutes, give it a mix and taste your salt. Turn the heat off and garnish it with some fresh or frozen coriander leaves.
13) Enjoy it with roti or rice.
