If you are fasting, can’t you have medu vada? Who said that? Here is the recipe for upwasacha medu vada. Easy, simple yet delicious recipe. Aashadhi Ekadashi round the corner. Try this recipe on that day and drop a comment for me. Do not forget to like, share and subscribe.
Ingredients:
• 1 cup Water
• Salt to taste
• 1/2 cup Varai / Bhagar/ Vrat ke chaval
• Boiled, peeled and grated Potato
• 1/4 tsp Cumin seeds
• Chopped Green chili
• Grated Ginger
• Finely chopped Coriander leaves
• 1-2 tsp Shredded fresh Coconut
• Oil for frying
Method:
• Heat up water in a pan.
• When water begins to boil add salt, varai and mix well.
• You can blend varai a little if you want in mixer.
• Cover and cook until varai soaks all the water on low heat.
• Turn off the gas and let it be as it is for about 10 minutes. Do not
remove the lid.
• After about 10 minutes, remove the lid and separate and mash
the rice a little.
• Add potato, cumin seeds, green chili, ginger, coriander leaves,
fresh coconut and mix everything well together.
• Knead dough from it.
• Make vade from the mixture. Give it a shape of medu vada.
• Make nice and smooth vada.
• Heat up oil on medium heat for frying.
• Drop vade in hot oil and fry until it gets kharpus golden color from
both sides on medium heat.
• Take the vade out of oil, drain excess oil and transfer them into a
dish.
• Upwasache medu vade are all ready.
• You can have medu vade as it is or serve with upwasachi chutney
or upwas missal kat or with shengadanyachi amti.
