Peach Oatmeal Bars
In a large bowl mix:
1 1/2 cups flour
1 cup rolled oats
1/2 cup dark brown sugar
1/2 tsp baking soda
1/2 tsp cinnamon
1/2 tsp kosher salt
Add
7 tbsp melted coconut oil. Mix again into a crumbly dough
Pack 3/4 of the mixture into a parchment-lined baking pan.
Layer 1-2 cups reduced peaches (lemon juice, 3 tbsp sugar, 1/4 cup water, cooked down into a jam)
Sprinkle over the rest of the oat mixture.
Bake 350º F for 35 minutes until the top is golden brown. Let cool before serving.
Breakfast Fried Rice:
In a non-stick pan add olive oil
Saute 1/4 cup chopped onions until translucent
Add 1/3 cup Just Egg, scramble together
Add 1 cup spinach
1 1/2 cups cooked brown rice
1 1/2 tbsp soy sauce
1 tsp sesame oil
Mix and serve.
