And make a dough with stand mixer. Mix 1-2min with low speed, and 8-10min with medium speed(until well corporated). Dough will be runny. Take the dough out to the surface, and sprinkle some dusting flour(bread flour or all-purpose flour). Knead with your hand, about 1-2min. If you don't have stand mixer, you can follow this step with your hands. 2.When the dough is smooth, put it back into the bowl and let it rise for about 1hour to 1hour 30min in room temp. 3.When the dough double in size, using scraper, divide into 6 pieces. Using hands, make the dough into round shape. Let it rise for 10-15min. 4.Roll the dough into an oval shape with rolling pin. Fold the dough one-third on each side, and then fold it by one-third again, pressing to tighten. Then fold one third more in the same direction to seal the dough. Lightly roll the dough with your hands,into a long rugby ball shape. 5.Let it rise for 1hour. 6.Make sheath using cutter knife or baguette knife.
