This is by far the easiest lemon loaf I've ever done yet it's crumbly but perfectly moist, and really delicious. You can bake in a single 8'' loaf pan, or as 12 cupcakes like I did. Bon appetit!
-Bake at 180 C / 375 F in pre heated oven, for around 20 (cupcakes) or 40 (loaf) minutes.
-The cup I use is 200 ml, don't convert to US cups 1:1
INGREDIENTS
125 grams of butter (room temp)
200 grams of sugar
2 M eggs (room temp)
1 tbsp vanilla extract
1 pinch of salt
Zest of 1 lemon
210 grams of flour
150 ml whole milk
1.5 tsp baking powder
GLAZE
1/2 lemon juice (2 tbsp)
100 grams of confectioners' sugar
