The kings' cake ! A French classic! We taste it this year on January 8 for the Epiphany (sometimes even afterwards to prolong the pleasure). Based on puff pastry and almond cream, you can add anything you want, cooked fruit, chocolate chips, raisins, citrus zest, etc... Here I offer you my citrus recipe. I've been doing this for years and it's always a hit. You can replace the cognac with vanilla or orange blossom, for example, if you want an option that suits you. Good tasting !
Ingredients :
2 circles of puff pastry of 22 cm
75 g (¼ cup) softened butter
75g (½ cup) icing sugar
75 g (3/4 cup) ground almonds
1 egg
Zest of 1 large lemon
Zest of 1 orange
Optional (but so good with): 1 tablespoon cognac
1 egg yolk
