There is nothing that will
There is nothing that will warm you up better in the cold winter days than this lentil soup. So easy and so nutritious. A signature in the middle eastern cuisine.

Ingredients:
- 1 cup of lentils
- 1 medium onion, chopped
- 2 tablespoon of olive oil
- 1 teaspoon salt
- ¼ black pepper
- ½ teaspoon of cumin powder
- 6-8 cups of water, depending on the desired thickness
- For topping: Torn bread or croutons, lemon wedges
Directions:
- In a large pot over medium heat, sauté the onion in the olive oil until onions become slightly golden
- Add the lentils seasoning, water, and stir
- When the water comes to a boil, lower the heat, cover, and let the soup simmer for 30-45 minutes, or until the lentil are fully tender
- Transfer the soup in a blender or food processor, and puree it
- Transfer the soup back into the same pot, and let it cook for another 15 minutes, uncovered
- Serve hot in bowls, with lemon wedges and croutons
- And enjoy !
