But today’s recipe is not just about a Hare Matar ka Paratha, it is also about how to store matar for a long time. Usually we freeze it, but it loses its colour and sweetness after freezing. I have shared with you a kitchen hack that will help to retain the colour and sweetness of the green peas.

Recipe :
Hare Matar ka Paratha
Preparation Time: 30 minutes
Cooking Time: 20 minutes
Serves: 3-4

Ingredients:
Dough
2 Cups Whole Wheat Flour
¼ Tsp Salt
Water
1 Tsp Oil
½ tsp carom seeds
Stuffing:
2 Cups shelled Peas
A Pinch of Asafoetida
1 Tsp Cumin Seeds
1 tbsp chopped Green Chillies
1 Tbsp chopped Ginger
1 Tsp Pepper Powder
1 tsp garam masala powder
1 tbsp coriander powder
Salt to Taste
1 tbsp raw mango powder
1 tsp kasuri methi
1 Tsp Oil
½ cup malai

Method:
In a large bowl or parat, take the wheat flour and ½ tsp salt, carom seeds. Add a little water at a time and knead to a soft dough. Add 1 tsp oil and knead well.
Let the dough rest for 20 minutes.
Meanwhile prepare the stuffing.
Heat oil in a pan. add the asafoetida and the cumin seeds,. Once the cumin seeds crackle add the chopped green chilies and ginger till the raw smell goes away. Next add the peas, salt, powdered spices and mix.
Add the chopped green chillies. Cover and cook till the green peas are tender.
Coarsely crush them in a grinder.
Knead the rested dough for 2 minutes again and break into large lemon sized balls.
With the help of rolling pin roll the dough into a circle of 8 inch diameter.
Spread some malai over it. Fold up the paratha and press down. Roll out the paratha to 4” size again. Repeat the process.
Place around 2 tablespoon of filling in the centre of one paratha.
Cover with another and pinch them together forming a seal.
Roll again into a circle of approx. 1/2 inch thickness.
Place the paratha on a medium hot tawa.
Once there are light brown spots on one side, flip the paratha and apply ghee/oil.
Flip again and apply more butter/ghee/oil on the other side now. Cook till paratha has brown patches all over.
Serve hot with yogurt and pickle.
