416 Brisket Tacos
Ingredients:
250 mL (1 cup) beef stock
1 - 113 mL can chopped hatch chilies
1- 284 mL can Rotel
30 mL (2 Tbsp) Taco seasoning mix
15 mL (1 Tbsp) ground black pepper
Salt to taste
1.5 Kg (3 pound) chunk of brisket
2 large red onions, sliced
2-3 jalapeño peppers, sliced
Method:
Preheat oven to 120ºC (250ºF).
Mix together the stock, hatch chilies, Rotel, seasoning mix, pepper and salt.
Place the Brisket in a Dutch oven, place the onions and jalapeño over and around the brisket; then pour on the liquid mixture.
Cover with a tight fitting lid and place in the oven for 5-6 hours.
Check occasionally, and add more liquid if needed.
Remove the brisket from the Dutch oven and shredded, then top with the onions etc.
If there is still a lot of liquid left in the pot, bring to a boil and reduce almost to a syrup before pouring over and mixing into the shredded beef.
Serve on tortillas or buns with your favourite toppings.
