In this video, Brad experiments with the Fermzilla All Rounder and a spunding valve to explore the possibility of brewing a crisp, clean lager at room temperature. Traditionally, lagers require cooler fermentation temperatures to suppress the production of fruity and spicy esters. Fermenting under pressure acts as a lid on these esters, preventing them from becoming too pronounced. This method can reduce the yeast's tendency to produce esters, enabling the fermentation of lagers at warmer, room temperatures without sacrificing the clean, crisp character desired in a high-quality lager.
