Gobi Gosht:

Ingredients:
Beef    1/2 kg
Cauliflower   1
Oil    ½ cup
Onion    1 (large)
Tomatoes   2 (medium)
Ginger garlic paste  1 tbsp
Whole all spice  1 tbsp
Red chili powder  1 tbsp
Coriander powder  1 tbsp
Turmeric powder  ½ tsp
Ginger piece (julienned) 1
Coriander (chopped)  2-3
Green chilies    for garnishing
Salt    to taste

Method:
Cut the cauliflower in small florets. Heat  oil in a skillet and add the cauliflower along with ½ tsp turmeric powder. Shallow fry on medium to high heat for 3-4 minutes or until the cauliflower is crisp. Keep aside. In the same pot add whole spices followed by the sliced onions.
Fry onions until golden brown. Add the ginger-garlic paste, tomatoes, powdered spices and salt. Sauté for 10 minutes, adding water as required keeping the masala from burning. Add the beef along with a cup of water, cauliflower and sauté for another 10 minutes. Add one more cup water, cover the lid and cook for15 minutes or until the cauliflower is tender. Garnish with ginger, green chilies and cilantro. Serve hot with naan.




Bhagray Huwe Chawal:

Ingredients:
Rice (soaked)   2 cups
Oil    1/4 cup
Green cardamoms  2-3
Cloves    3-4
Cinnamon   1 inch
Bay leaves   2
Onion (sliced)   1 cup
Green chilies   3-4
Ginger garlic paste  1 tsp
Fresh coriander (chopped) 1 tbsp
Lime juice   1 tsp
Salt     to taste
Curry leaves   few
Method:
Add oil in a pan. Once the oil is hot, add cardamom, cloves, cinnamon and bay leaf and let them crackle for a few seconds. Add onion, green chili, ginger and garlic and cook for 3-4 minutes until onion is slightly browned. Now add curry leaves and sauté for a minute. Add water, salt and lemon juice. Drain the rice and add it in the pan. Cover the pan and simmer the heat to low. Cook until rice is cooked and all the water is absorbed. Remove the pan from heat and let the rice rest for 5 minutes. Fluff the rice with a fork. Garnish with fried onions and serve hot.


Dhaniye Podinay Ki Chutney:

Ingredients:
Fresh coriander (chopped) 1 cup
Mint leaves   1 cup
Cumin seeds   ½ tsp
Sesame seeds   ½ tsp
Coconut (grated)  2 tsp
Garlic    3
Green chili (chopped)  1
Ginger (chopped)  ¼ inch piece
Sugar    1 tsp
Lemon juice   1 tsp
Salt    1 ½ tbsp
Water    as required

Method:
In the blender add all the ingredients and blend well. Serve.
