This rice pilaf is like no other pilaf you’ve ever had before. Creamy and full of flavor with a slight kick coming from the cheese.

INGREDIENTS
2 tbsp. oil
1 cup long grain rice
1/4 cup diced white onion
1 poblano chili, seeded and chopped
6 green onions, thinly sliced
1 clove garlic, minced
1/2 tsp. salt
1/4 tsp. ground cumin
1 1/3 cups chicken broth
1 1/2 shredded Monterey Jack cheese
1/3 cup coarsely chopped cilantro

DIRECTIONS
Heat oil over medium heat. Add white onion and poblano peppers and cook until softened around 5 minutes.
Add green onion, garlic, salt and cumin and cook for one more minute.
Add rice, cook and stir 2 minutes or until rice looks opaque.
Add broth and bring to a boil. Cover and reduce heat and simmer for 15 minutes.
While the rice cooks, pre-heat oven to 375°
Remove rice from heat, add 1 cup of cheese and chopped cilantro and mix well.
Transfer to greased baking dish and top with remaining 1/3 cup cheese.
Bake uncovered for 15 minutes. Enjoy
