Portuguese Chourico
(Extra Spicy)

Ingredients:
8 to10 pounds Pork Loin
1/4 cup Paprika
1/4 cup Cayenne
2 tbsp Ground Black Pepper
1/4 cup Coarse Salt or Table Salt
1/2 cup Chilli Paste
1/2 cup Chopped Garlic
1 cup Red Wine
Pork Castings

Method: Cut Pork Loin into bite size pieces and put in large bowl and ad all ingredients except castings and marinade 2 to 3 days. Fill Casings with sausage maker and smoke for approx 7 to 8 hrs..Enjoy!!!
