INGREDIENTS:
For Boiling:
* Chickpea (छोले) - 1 bowl
* Salt (नमक)
* Garam masala (गरम मसाला)
* Onion (प्याज) - 2
* Chhole masala (छोले मसाला) - 2 spoons

For Chhole:
* Oil (तेल) - 1 serving spoons
* Ginger garlic paste (अदरक लहसुन का पेस्ट)
* Tomatoes (टमाटर)
* Red chili powder(लाल मिर्च पाउडर) -1 tsp
* Coriander powder (धनिया पाउडर) - 1 tsp
* Turmeric powder (हल्दी पाउडर) - some
* Roasted cumin powder (भुना जीरा पाउडर) - 1/2 tsp
* Garam masala (गरम मसाला) - 1/2 tsp
* Salt (नमक) - as per taste
* Chhole masala (छोले मसाला) - 2 spoon
* Dried fenugreek leaves (कसूरी मेथी)
* Spinach+Coriander paste (पालक + धनिया पेस्ट)
* Curd (दही) - 4 spoons
* Chickpea (छोले)
* Coriander leaves (धनिया पत्ती)

For Tadka:
* Butter (बटर)
* Cumin seeds (जीरा)
* Ginger (अदरक)
* Green chili (हरी मिर्च)
* Red chili powder(लाल मिर्च पाउडर)

RECIPE:
Soak the Chickpeas for overnight then boil them in the cooker by putting some Salt, Garam Masala & chopped Onion.Then take out them in a strainer.Keep them in a bowl,put some Chhole Masala on them.
Put some Spinach in the boiling water & boil the Spinach for 1-2 mins then put them directly in the ice cold water.Then grind them by adding some Coriander Leaves.
In a pan,put Oil,Ginger & Garlic Paste,ground Tomatoes & cook them then put some Spices like Red Chili Powder,Coriander Powder,Turmeric Powder,Cumin Powder,Garam Masala Powder,Salt,Chana Masala Powder,Dried Fenugreek Leaves & put some boiled water of Chickpeas in it.Cook them then put the Spinach & Coriander Leaves paste,whisked Curd and stir them continuously.Cook them for 5-7 mins.Then put boiled Chickpeas & cook them for 5-7 mins more.Then give it a Tadka of Ghee/Butter,Cumin Seeds,long chopped Ginger & Green Chilies & Red Chili Powder.Garnish the Dhaba Style Palak Chhole with Coriander Leaves & serve it with Rice/Naan/Tandoori Roti.
