Neapolitan Cookies and Melatonia Cover

This is a video with a mixture of things:
I cover a new song I love called Melatonia by Highly Suspect - Love their music so much that I would highly suspect.. er.. i mean i would highly suggest you check them out!
I show you a few techniques to making these Neapolitan 'ice-cream-scoop-like' cookies, but using fresh strawberries both times gave me trouble.
I made one batch and I didn't like them, then I made a second batch (and doubled it in size) to tried to make them better.
All and all it was harder to make the three doughs into the same consistency. Here's a recipe I started with the second time I made them and changed it as I went. These were better tasting than the first recipe I went off of.
2 ½ cups all purpose flour
1 tbsp cornstarch
½ tsp baking soda
¼ tsp salt
⅔ cup freeze-dried strawberries (this measurement is before pulverizing in the food processor)
1 cup unsalted butter at room temperature (2 sticks)
1 ¼ cup granulated sugar
1 large egg at room temperature
1 large egg yolk at room temperature
2 tsp vanilla extract
1 tsp lemon zest divided
2 ½ tbsp Dutch-process cocoa powder
¼ tsp instant espresso optional
You really want to get a good spring-release ice-cream scoop that you don't have to constantly clean after each scoop.. or just let the flavors bleed together, that was way faster than being OCD about it the first time. At least you get that chopped texture. (click click click click. so annoying. I'm prob never making these again.. hahaha)
And last but not least.. I make these videos for entertainment.. mine and anyone else who enjoys them. I will not be offended if you get bored and click away, but I was hoping to make it enjoyable, since I don't have one target concept for my videos here. lol.
