Making a pineapple pie is a delightful way to enjoy a sweet and tangy dessert. Here's a simple recipe to make a delicious pineapple pie:
Ingredients:
For the pie crust:

   2 1/2 cups all-purpose flour
   1 teaspoon salt
   1 tablespoon granulated sugar
   1 cup unsalted butter, chilled and cut into small pieces
   6-8 tablespoons ice water

For the pineapple filling:

   4 cups fresh or canned crushed pineapple (drained if using canned)
   3/4 cup granulated sugar
   1/4 cup cornstarch
   1 teaspoon vanilla extract
   1 tablespoon lemon juice
   Pinch of salt

Instructions:
1. Prepare the Pie Crust:

   In a large mixing bowl, combine the flour, salt, and sugar.
   Add the chilled butter pieces and use a pastry cutter or your fingers to cut the butter into the flour mixture until it resembles coarse crumbs.
   Gradually add the ice water, 1 tablespoon at a time, mixing lightly with a fork until the dough comes together. Be careful not to overwork the dough.
   Divide the dough into two equal portions, shape them into discs, wrap them in plastic wrap, and refrigerate for at least 30 minutes.

2. Make the Pineapple Filling:

   In a saucepan, combine the crushed pineapple, sugar, cornstarch, vanilla extract, lemon juice, and a pinch of salt.
   Cook the mixture over medium heat, stirring constantly until it thickens, usually for about 5-7 minutes. Remove from heat and let it cool slightly.

3. Preheat and Assemble the Pie:

   Preheat your oven to 375°F (190°C).
   On a lightly floured surface, roll out one disc of the chilled pie dough to fit a 9-inch pie dish. Carefully transfer the rolled-out dough to the pie dish.

4. Fill and Bake the Pie:
