It has been such a long time since me and Mummy Ji have done a video and also since I have cooked Indian food! This one is definitely one of my all time favorite dish - Soyabean Dry Sabzi.

Soyabean just tastes like chicken but is not chicken, it is a great substitution if you are vegetarian or vegan. Hope you guys enjoyed watching this video as much as we had fun recording it.

Recipe:

Medium bowl of soya beans
2x brown onions
Fist full of ginger
half clove of garlic
Either 2 fresh tomatoes or half a tin of crushed tomatoes
2 green chillies
cumin seeds
oil or ghee (any for frying)
salt
tumeric
chilli powder
garam masala
black pepper
chilli flakes (optional)
corriander powder
kasoori methi
Cream (optional)

Directions:

Firstly, finely cut or grind onions and ginger together, and then finely cut garlic and leave seperately. Also at this time grind together tomatoes and chilis. Then, wash the soya beans a couple of times in water, then soak in plenty of water so that they can absorb this and set aside. Then heat up a large pan with some oil (enough to cover the bottom) and add in some cumin seeds (about 2 small pinches), and roast this until the oil is hot. Then add in garlic and fry for a minute or 2, then add in the onions and ginger to this and fry until soft. Next, add in tomatoes and chillis and a small amount of water to this and mix until all blended. Fry this for a couple of minutes then add in 1 teaspoon of salt, 1/2 a teaspoon of tumeric, 1/2 teaspoon of chilli powder, 1/4 teaspoon of chilli powder, 1/4 teaspoon of garam masala, 1/2 teaspoon of coriander powder, and a small pinch of kasoori methi and mix well. Next add in about 1/4-1/2 of a small bottle of cream and stir well (this will ensure a rich thick texture, however this is optional and you can add in water instead if you would rather remain dairy free). Keep stirring this and fry for around 5 minutes to ensure the flavours develop.

Then, squeeze out any remaining water from the soya beans to ensure they are not full of water and add into the vegetable mix you have made and stir well. Then you can turn down the heat and put on the lid and let simmer for around 10 minutes but checking in often to ensure it is not burning to the bottom of the pan. Once you feel this is all mixed your meal is ready and you can serve with whatever you would like to eat it with, although our preference is roti!
