Yeast harvest is a great way to save yeast from a previous batch of homebrewed beer.  This can be done as a cost saving method, keeping wild yeast strain or non-commercial strain.  After harvesting the yeast it can be stored in the fridge until needed for a future batch of beer by making a yeast starter.
