This is one of my favorite casseroles and it freezes well…One you can make ahead..Has all the flavors of tacos, but in a casserole..I started making this one when my children were growing up.  They always loved it.  I always made it with the Lacey corn bread.  We couldn’t afford the corn tortillas, so I had to improvise..That’s how I came up with a lot of my recipes…Please Share, Subscribe, and leave me a comment…and give me a 👍👍👍..It really helps my channel..especially the comments and sharing..

Recipe:
1 lb ground beef
1/2 cup diced onion
1/3 cup diced red pepper
2 cloves garlic
3 tablespoons tomato paste
1 can rotel tomatoes
1 1/2 tablespoons taco seasoning
1 tablespoon chili seasoning
1 can whole kernel corn
1 /2 can black beans
1 can refried beans
7-8 corn tortillas or Lacey cornbread
1 cup shredded sharp cheddar cheese
1 cup pepper jack cheese ..shredded
1 cup Colby ..shredded
Optional…extra taco sauce or salsa

In a skillet brown your ground beef, drain , add onions and pepper and cook about 3 minutes…add tomato paste, and rotel tomatoes..stir well…add seasonings, corn, and black beans…cook about 3 minutes…In a casserole dish layer your corn bread or corn tortillas, meat mixture,  taco sauce, refried beans, cheese…repeat layers ending with cheese…Bake 350 degrees for 30 minutes..
Serve with lettuce, tomatoes, sour cream, extra onions, avacodos…
