Ingredients:
For masala: coriander leaves ..1/2 a bunch
Mint leaves..1 bunch
Ginger...1" two pieces
Garlic..o4-5 clove
Fennel seed 1 tsp
Onion chopped 1/2 cup
Green chilli..4-5(or acc. To taste)
Amchur powder 1 tb sp
Cumin powder..2 tsp
Garam masala ..2 tsp
Green chilli sauce..2 tsp
Salt
Black salt 2 tsp

Other ingredients:
Dry peas..500 gms
Potatoes 2 big

For serving :
Thin sev
Chopped vegetables like tomato ,onion,carrot .
Chopped coriander for garnishing

Ingredients for puri:

Fine sooji ...1 cup
Maida.......1 tb sp
Oil........2 tsp
Salt
Baking powder a pinch

Soak peas overnight and pressure cook  along with potatoes without adding salt.Note: while boiling peas add 1 tsp oil.It cooks very well.

In a kadai add 1 tsp oli and fry fennel seeds,  onion chopped , green chilli, ginger, garlic for 2 minutes.now add mint and coriander, saute till it turns soft.

Once done grind with rest of the ingredients amchur powder , cumin powder, garam masala, green chilli sauce .
Mash potatoes and add to a vessel , also add the ground masala to it. Adjust water and add black salt and salt.Once boiled enough switch off the flame.
Boil cooked peas on a vessel separately on low flame.

Making puri:

In a bowl add sooji,maida,baking powder,salt ,1 tsp oil and very less water. Mix it well for 5 mins to form a tight dough . Now add in one more tsp oil and knead again for3-4 mins.cover it and rest for 20 mins.

Now make big balls out of the dough and roll it really thin using a rolling pin. Cut into desired shapes and fry on a medium flame until it turns brown in color .

To make Sev:
Besan ..2 cups
Oil 1 tb sp
Salt
Soda a pinch
Water as needed
Oil to deep fry

Make slightly loose batter out of above ingredients and deep fry using sev maker.


Now to serve,
Take a plate, crush some puris ,later add some peas from the masala,add sweet chutney, pinch of chat masala and chilli powder.Now add tmasala over this,and add chopped onion,tomato,carrot. finally put some sev on top and garnish with coriander leaves.

Sweet chutney:
Soft  dates 5-6
Thick tamarind paste  2 tb sp
Jaggery grated 2 tb sp
Salt
Red chilli powder 1 tsp
Cumin powder 1 tsp

Grind soft dates to a fine paste.add some strain it to a vessel. Add in tamarind paste and 1 cup water. Let it boil for sometime. After some time add in rest of the ingredients and cook until it starts thickening,switch off the flame and keep aside.
