Lentils are an excellent source of protein, fiber, B vitamins, iron, potassium, zinc, phosphorus, magnesium, manganese, copper, and a plethora of other minerals. They, like other legumes, are high in phytochemicals and may help lower your risk of cancer. Their low glycemic index indicates they may potentially aid in glucose regulation.
The glycemic index  of lentils varies from 18 to 52, depending on the variety and method of cooking. Red lentils that have been boiled have a glycemic index that is significantly lower than canned green lentils.
A 2008 study published in "ARYA Atherosclerosis" found that people's fasting blood sugar and cholesterol levels dropped when they replaced 30 grams of bread and 20 grams of cheese for 50 grams of lentils and 6 grams of canola oil daily. This shows that substituting low-glycemic index items for those higher on the glycemic index, such as bread and other refined grains, can help reduce blood sugar levels.
Lentils are one of the most convenient dried legumes to cook because they don't need to be soaked before cooking. The preparation is easy: just give the lentils a quick rinse and then cook them in a pot with water at a ratio of 1:2.5 for around 25 minutes. They are flexible and can be used in place of meat in a variety of dishes, including soups, salads, and chili; curry dishes served with rice; and meat-based sauces.
