So in honor of that and also it is National Pound Cake Day, I am making another classic Southern Pound Cake, Lemon Pound Cake; but with a twist making a Semi-Homemade version using a box Yellow Cake Mix!! Super moist, tender, full of Lemon flavor and we are going to add some fresh and natural lemon Ingredients and it taste like you made it from scratch! Drizzle with a fresh Lemon Simple Syrup and Lemon Glaze on top!! Everyone will love and enjoy this also makes a great dessert for the Spring!! 1 (18.25 ounce) box yellow cake mix 1 cup all-purpose flour, spooned and leveled 1 cup white sugar 1/4 teaspoon salt 1 cup canola or vegetable oil 5 cold extra-large or jumbo eggs 2 (5.3 ounce) cartons (1 cup) cold lemon Greek yogurt, (recommend Chobani) 2 large lemons, zest and juice 1 1/2 teaspoons pure vanilla extract 2 teaspoons pure lemon extract 1 cup cold buttermilk Yellow food coloring, optional Lemon zest and slices, for garnish (optional) Fresh whipped cream, for garnish (optional) Lemon Simple Syrup 1 cup white sugar 1/2 cup water 1/4 cup freshly squeezed lemon juice (or more if you like it tart) Lemon Glaze 1 cup powdered sugar, sifted or whisk 2 to 3 tablespoons freshly squeezed lemon juice Splash of pure vanilla extract Spray a 10 inch bundt cake pan with baking spray and flour (Baker’s Joy or PAM Baking) or grease the pan with butter and flour. Set aside. In a medium bowl, add in the cake mix, sugar, flour, and salt; whisk or sift together until well incorporated. Set aside. In a large bowl with a hand mixer or stand mixer with paddle attachment, add in the oil, eggs, Greek yogurt, lemon zest, lemon juice, vanilla extract and lemon extract; mix on medium speed until well blended. Add the dry ingredients into the wet ingredients alternating with the buttermilk until the mixture is well combined beginning and ending with the dry ingredients. Add and mix in a few drops of yellow food coloring if desired. Pour or spoon the cake batter into the prepared Bundt pan, shake and bang the pan to release the air bubbles. Place it in a cold oven. As soon you put it in the oven, turn it on to 350 degrees and when it preheats, bake it for 1 hour (check it after 50 minutes). Remove from the oven and place it on a wire rack; poke holes on top of the cake and pour half of the lemon simple syrup on top while it’s hot. Let the pound cake rest in the pan for about 15 to 20 minutes then remove it from the pan and let cool completely, then place it on a cake stand and pour the rest of the lemon syrup on top. Drizzle on the lemon glaze and let it harden. Cut into desired slices, serve with a lemon slice and whipped cream (if desired) and enjoy! For the Lemon Simple Syrup In a medium or large pot over high heat, add sugar, water, and lemon juice; stir until well combined and bring to a boil. After it comes to a boil, let it cook until the sugar dissolves for about 2 to 3 minutes. Remove from the heat. For the Lemon Glaze In a medium bowl, add in the powdered sugar, vanilla extract, and lemon juice; whisk or stir until well combined and get it to the right consistency (you can always add more powdered sugar or lemon juice if needed).
