Ingredients:

- 1 large zucchini, diced
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1/2 cup olives (Kalamata or a mix), pitted and sliced
- 200g feta cheese, crumbled
- shredded Parmesan cheese + any cheese you like to add
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1/4 cup sun-dried tomatoes - optional
- 1/4 cup fresh basil, chopped
- 1 tablespoon fresh oregano, chopped (or 1 teaspoon dried oregano)

- 4 large eggs
- 1 370 ml can evaporated milk
- 6-8 cups cubed bread – mine 500g
- 1/2 teaspoon salt or to taste
- 1 tsp garlic powder
- 1/2 tsp smoked paprika
- 1/2 teaspoon black pepper
- Olive oil for sautéing and greasing the baking dish

oven to 380°F (180°C)  20 mins
Air fryer 340°F (180°C)  20 mins
