Akki roti is a Karnataka special breakfast recipe. This is a very easy and simple recipe. It needs very few ingredients those are easily available in your pantry. It turns out nice and crispy. It looks nice and tastes just awesome. This is a real quick recipe that doesn’t need too many fancy ingredients. In local language of Karnataka Akki roti means rice bread. Ingredients:
• 3 cups Rice flour
• 1 finely chopped Onion
• 1/2 tsp Cumin seeds
• 1 tbsp grated Ginger
• 1 tsp Green chili paste
• 1/4 cup shredded fresh Coconut
• Finely chopped Coriander leaves
• Salt to taste
• Water
• Oil

Method:
• Mix rice flour, onion, cumin seeds, ginger, green chili paste, fresh coconut, coriander leaves,
  salt well together and add a little water at a time to knead soft dough.
• You can use ginger paste in place of grated ginger.
• You can add 1 tsp hot oil if you want.
• You can add veggies of your choice.
• Take a small portion from the dough and make it smooth and even.
• Place the dough ball on a banana leaf and pat it gently to make as thin roti as possible.
• You can use plastic sheet or butter paper or aluminium foil in place of banana leaf.
• Heat up a skillet on medium to high heat and spread oil on it.
• Transfer the roti on hot pan and take off the banana leaf carefully.
• When the akki roti is roasted well from lower side spread oil on upper side and flip the roti
 over.
• When the roti is roasted well from lower side take it off on a jali.
• Akki roti is all ready.
• You can have it as it is or serve with coconut chutney.
