Ingredients:
Toor dal / Tuvara Parippu – 3 handfuls
Green chilly – 4
Turmeric powder - ¼ tsp
Curry leaves
Coconut oil – 1 tsp
Potato – 2 big
Tomato – 1 big
Brinjal – 2 small
Onion – 2 medium
Drumsticks
Carrot
Plantain / Raw banana – 1 small
Green chilly – 3
Curry leaves
Sambar powder – 3 tbsp
Salt
Tamarind extract
Asafoetida / Hing
Jaggery
Coriander leaves

For tempering:
Coconut Oil
Mustard seeds - 1 tbsp
fenugreek uluva - A pinch
Dried Red Chillies
Turmeric powder - ¼ tsp
Red chilly powder - ¼ tbsp
Curry leaves

Steps:
Cook the toor dal in a pressure cooker adding 2 cups of water, green chilly, turmeric powder, curry leaves and 1 tsp coconut oil for 1 whistle on high flame and then on a medium flame for 15 minutes.
Switch off. Let the pressure release naturally.

Open the cooker and add potato, tomato, brinjal, onion, drumsticks, carrot, plantain, green chilly and curry leaves.
Add water, sambar powder and salt.
Cook for 1 whistle on high flame.
Switch off and let the pressure release naturally.

Open the cooker and mix well.
Switch on the flame and add tamarind extract.
Bring it to boil and add asafoetida, jaggery and coriander leaves.

Heat oil in a pan for tempering. Splutter mustard seeds.
Add a pinch of asafoetida, dry red chillies, curry leaves, turmeric powder and red chilly powder.
Switch off and add the tempering to sambar.
Enjoy the instant sambar with hot rice!
