Nankhatai Cookies Recipe:

Maida - 1 Cup
Besan - ¼ Cup
Rava - 1 tbsp
Baking Soda - A Pinch
Salt - A Pinch
Cardamom Powder - ¼ tsp
Powdered Sugar - ½ Cup
Ghee - ½ Cup
Chopped Nuts (Almond, Pista, Cashew) - 2 tbsp
Cold Milk - If Required

Cooking Instructions:

1. Sieve the maida, besan and baking soda into a bowl. Add rava, salt and cardamom powder to it and mix to combine evenly.

2. Add powdered sugar and whisk. Add ghee and rub in the flour using your fingers. Form it into a soft dough.

3. Cover and rest the dough for 15 minutes in the refrigerator. Knead gently to smoothen the dough.

4. Divide them into portions the size of a small lemon. If there is any difficulty in shaping the dough, add a few drops of cold milk and mix.

5. Slightly flatten the dough balls. Place in a baking tray and make slight dents in the centre of the cookies. Garnish with chopped nuts of your choice.

6. Bake in a preheated oven at 170c for 10-12 minutes or until slightly golden. Take the tray out of the oven and allow them to cool at room temperature to harden completely.

Cooking Tips:

1. The rava can also be skipped in this recipe. It is added for extra crunch.

2. Store it in an airtight container for up to 10 days.

3. Keep a close eye on the cookies after baking for 10 minutes as they tend to burn quickly.
