Fool proof fish grilling.  This is a very easy way to grill up your catch that ensures a tasty outcome.  First step, catch up some nice Snappers off a bridge (or any type and technique you prefer).  Second, filet the fish leaving the skin and scales intact.  The scales and skin will act as a barrier preventing burning of the delicate fish filets and keeping your fish moist.  Next, season with your favorite spices and drop a couple of dabs of butter or some olive oil.  For a dryer filet, don't use the oil or butter.  It will still come out moist.  Finally, lay the filets skin/scale side down over a medium heat.  Close the lid, and walk away (very important).  By keeping the lid shut, the filet will broil on the top and cook up through the scales and skin at an even rate.  Give it five minutes for a thin filet and up to ten for a large filet.  Don't flip the filet, just let it cook right side up.  Once the filet is cooked to desired texture (white and flaky), remove and serve.  You can eat right off the skin, or scoop the meat onto your plate.  Easy, tasty, and virtually mistake proof.
