I travel to La Unión, Honduras, to learn how to make Garifuna casabe. Casabe is a giant tortilla made from yucca (also known as cassava) and the staple food in the Garifuna culture. Since the 1600s the Garifuna people ate casabe on the island of San Vicente to survive and now it is eaten internationally.

My teacher Lety tells me her incredible story and shows me the process step by step: harvesting the cassava on her farm, preparing the cassava flour, heating the flour on a griddle, and cutting the casabe into different shapes.

At the end of the day, I take the casabe that I prepared to La Ceiba so that people can taste it and give me a score from 0 to 10.
