Upgrade your cantaloupe by adding prosciutto, mint and balsamic vinegar. This simple appetizer recipe brings together sweet and salty for a party treat or midday snack.

Prosciutto-Wrapped Melon
Use a melon baller to transform plain cantaloupe into sophisticated spheres.
Yields 18 to 24 servings

Ingredients
1 cantaloupe
6 slices of prosciutto*
1 tablespoon balsamic vinegar
1 tablespoon fresh mint, chopped

Directions
Prepare melon by cutting in half and scooping out the seeds. Use a melon baller to create spheres or remove rind and cut melon into cubes. Slice prosciutto lengthwise into large enough strips to wrap around melon pieces. Place on a serving plate and drizzle with balsamic vinegar. Sprinkle with fresh mint. Chill before serving.

*Note: Prosciutto adds natural salt to this appetizer, so be sure to use this ingredient in moderation.
