Ingredients:

Chicken marinate
-1kg skinless chicken thigh
-50g shallots
-4 clove garlic
-1 tbsp sugar
-4 tbsp fish sauce
-4 tbsp of lemongrass or 1 stalk
-2 bird eye chilli

Condiments
-5 banh mi or long rolls
-200g carrots
-100g cucumber
-bunch of coriander
-bunch of spring onions
-2 bird eye chilli
-kewpie mayo
-soy sauce
-fried shallots
-chilli oil

Pickle brine
-100g vinegar
-500g water
-1 tsp sugar
-1 tsp salt

Methods:
1. Peel and julienne carrots and put in a container with the pickle brine, leave aside for 30 minutes for carrots to get pickled.

2. Prepare the condiments, slice cucumber, coriander (*leave stem for the chicken marinade*), spring onion and bird eye chillies

3. Prepare the chicken marinade, finely chop shallots, garlic, red chilli and lemongrass. Mix together with sugar, fish sauce and add the chicken thighs and mix well. Leave refridged for 30 minutes or overnight for more intense favour.

4. Cook each side of chicken thigh for 4-6 minutes on low to medium heat to avoid burning.

5. Assembling the banh mi, slice chicken thigh, spread mayo on banh mi, layer with chicken pieces, along with other condiments to your liking.
