Easy and healthy beans salad made with ingredients that are accessible and affordable. Perfect for a light lunch or dinner! Recipe: Easy Beans Salad Ingredients: 400g (14 oz) can of red beans, drained and rinsed 400g (14 oz) can of cannellini beans, drained and rinsed 160g (5.6 oz) can of sweet corn, drained (1 cup) ¼ of a large red onion 1 red bell pepper 8g (a handful) of parsley 3 tablespoons of white wine vinegar 4 tablespoons of extra virgin olive oil 1 tablespoon of brown sugar ½ teaspoon of salt or to taste ¼ teaspoon of black pepper or to taste Instructions: 1. Dice the red bell pepper, finely chop the onion and parsley. 2. To a large bowl, add the beans, sweet corn, bell pepper, onion and parsley. For the dressing, add white wine vinegar, extra virgin olive oil, sugar, salt and black pepper. Mix until combined. 3. Serve on its own or as a side dish. Notes/Tips: - The beans salad will stay in the fridge in an airtight container for up to 4 days. - Lemon juice can be used instead of white wine vinegar. - The beans salad pairs well with chicken or fish.
