Khinkali come from the mountain areas of Georgia where our ancestors started to cook them.
Nowadays you can find the whole variety of khinkali in Georgian restaurants, they serve khinkali with mushrooms, cheese, greenery, but it is marketing.  The true khinkali can only be made with beef and pork. A bit of fat (tail or beef) can be added.
The dough has to be tough but stretchy.
This video can help you to make the real khinkali.

List of ingredients:
For the dough:
Flour 1 kg (2.2 lb)
Salt 1 tbls
Water 400 ml (14oz)

For the stuffing:
Beef 0,5 kg (1.1 lb)
Pork 0,5 kg (1.1 lb)
Green coriander 1 bundle
1 or 2 onions
Ground red pepper or green chiles
Salt 1 tbls
Jeera 1/2 tsp (optional)

Before serving, sprinkle some black pepper on your khinkali.
Don’t use anything but your hands to eat them and be careful – don’t spill the delicious juice that is inside.
If you need to warm khinkali up – fry them slightly using butter, not oil – you will love it.
