And I realized that a generation has grown up that simply does not know our Soviet classics.
The fact that this is a Soviet dish is clearly written in many sources. Some of the prototypes were cutlets de volai, but even from pre-revolutionary times in St. Petersburg they began to prepare cutlets in the Novomikhailov style, which later, after some modification, simplification and adaptation to Soviet public catering, began to be called Kiev cutlets. But this happened only in 1948.
The recipe quickly became popular; all restaurants of the Intourist system began to prepare it, followed by other catering establishments.
