Koshari (Kushari)  - A popular Egyptian street food which is made from lentils, rice, chickpeas, macaroni and a spicy tomato sauce topped with crunchy fried onions. It is pretty healthy compared to other street foods. Even though it contains many different elements it is pretty easy to cook and assemble.

Ingredients :
1 cup Basmati Rice (washed and soaked in water for 1/2 hr)
2 Cups water for cooking rice
Salt as per taste
1 cup Macaroni Pasta (Cooked as per instruction on packet)
1 Cup Sprouted Masoor (Cooked in pressure cooker for 1 whistle)
1  cup Chickpeas (Soaked overnight and cooked in pressure cooker for 4-5 whistles)

Spices:
- 1 tbsp Coriander (Dhaniya) Powder
- 1 tbsp Red Chilli Powder
- 1 tbsp Cumin Seed (Jira) Powder
- 1 tbsp Paprika Powder
- 1/2 tbsp Grated Nutmeg powder
-  1/2 tsp Crushed Black Pepper

Onion tomato gravy:
1 tbsp Olive Oil
2-3 Cinnamon Stick
2  Bay Leaf (Tej Patta)
1 tbsp ginger garlic paste
1 Chopped Onion
Salt as per taste
2 cups Tomato Puree
1/8 cup Vinegar
1/4 tsp brown sugar (Optional)

For Fried Onion
1 red onion thinly sliced
Salt as per taste
All purpose flour for coating
Oil for frying

Recipe:
1)  Cook sprouted Lentils (Masoor) Dal in a pressure cooker for 1 whistle
2) Cook Soaked Chickpeas in a pressure cooker for 4-5 whisltes
3) Cook Macaroni pasta as per instruction on packet
4) Mix all spices and keep aside
Gravy:
1) In a pan add 1 tbsp oil
2) Add bay leaves and cinnamon sticks
3) Add 1 cup chopped onion
4) Add ginger garlic paste
5) Once cooked, add tomato puree
6) Add 2 tbsp mixed spices and salt as per taste
7) let it cook for 7-8 min
For rice
1) add 2 Cups water in a slow cooker / pot
2) ) Add remaining spices and salt as per taste
3) Add soaked rice and let it cook

For Fried onion:
1) Add all purpose floor and salt to onion and coat well
2) Fry onion in oil until crispy

Serving
-Make a layer of rice
-Then make a layer for cooked masoor (lentils)
-Then make a layer for Macaroni and chickpeas
-Add Gravy on top of it
-Lastly add fried onion
