Skinless Longganisa is a Filipino version of sausage that is usually made out of ground pork and a combination of garlic and other spices. It can be sweet, spicy, or garlicky. As the name suggests, this version is naked. Instead of using pig intestine as its casing, skinless longganisa is stuffed inside a plastic wrapper to keep it in shape.

This homemade version of skinless longganisa has no preservatives. It is perfect to serve in the dinner table with your family. But aside from that, it can also be a great business most especially for stay-at-home people. It's easy to make. Just follow these simple steps carefully.

INGREDIENTS:
• 1 kg. GROUND PORK
• 2-3 GARLIC CLOVES (you can add as many as you want)
• 4 tsp. IODIZED SALT
• 4 tbsp. CORNSTARCH
• 4 tbsp. SOY SAUCE
• 2-3 tbsp. LIQUID SEASONING
• 1 tbsp. GROUND PEPPER
• 2-3 tbsp. PAPRIKA
• 18 tbsp. SUGAR

PROCEDURE:
1. Combine all ingredients into a bowl.
2. Mix thoroughly to evenly distribute the spices and other ingredients.
3. Once done, refrigerate for about an hour or two. Prepare the materials to be used in wrapping.

STUFFING/WRAPPING:
1. Tie the already sealed end of the wrapper. This is to shape of the longganisa.
2. Scoop 35 grams of meat and stuff it inside the plastic wrapper using a funnel or embudo.
3. To get rid of some air or bubble inside the wrapper, you may pierce it using a toothpick.
4. Tie the other end to seal it and cut the excess plastic.
