Greetings! Roasted some chicken for dinner and wanted a super simple side dish to go along with that and the organic steamed broccoli we were having. Twice baked potatoes are the answer.
This super quick side dish is easy and delicious. Think about what you like on your baked potato and go for it! Here I have scooped out the insides of two very large potatoes, leaving about 1/4 inch around the edges so we have a nice boat for our filling. I used some butter, Greek style plain yogurt (but you can use sour cream) and some chopped, cooked bacon and shredded cheddar cheese. I mashed everything together and scooped the filling evenly between the four halves of potato.
I topped each potato with more cheese and chopped bacon then baked them for 20 minutes in a 350 degree oven until the cheese was melted and the bacon was crispy.
You can make these in advance and freeze them before you bake them the second time but after you have filled them. Then when you want one or two or however many you need for a meal, you can just reach into the freezer, take what you need and pop them in a 400 degree oven for about 30 minutes until they are brown and toasty. Easy!
