Ingredients;4 lbs strawberries 2 lbs
Ingredients;
4 lbs strawberries
2 lbs rhubarb
1 cup sugar (added in small quantities to taste)
1/4 Tsp salt
Instructions ;
-Wash fresh strawberries and remove stems. Cut in quarters. (If using frozen fruit, it helps to defrost it first. )
- Wash rhubarbs , cut ends and peel. Cut into 1 inch pieces .
-Puree strawberries and rhubarb in a food processor.
- pour into a large stockpot .
- Add 1/2 cup sugar and 1/4 Tsp salt.
- Place on med-high heat and bring to a gentle boil. Reduce heat to medium and simmer 20-30 minutes.
- Turn off heat and allow the mixture to cool a bit and the froth to settle.
- Pour 3 cups of mixture onto a lined 12x18 baking tray and spread evenly (about ¼ inch or ½ centimeter thick). This will make a paper-thin lavashak, which is my preference. It will come out about a millimeter thick when finished. If you would like it to have a bit more chew, you can add more.
- Place tray in the oven at 1750 F (79 Celsius) for 2 hours. Then turn off the heat and leave inside the oven overnight, 18-24 hours. If it’s taking too long you can speed the process by reheating the oven and turning it off immediately.
- Cut lavashak into size and store in an airtight bag or container. It will keep for a very long time.
**** Silicone liners make beautiful lavashak but take longer to dry.
**** Parchment paper helps lavashak dry faster. However, I recommend a good quality paper as the less expensive brands stick.
