One of the most obvious unwanted products in brewing is vinegar but what if you wanted it? This video gives the brief version of making vinegar from a pure spirit wash. This will create a standard white vinegar at 5% v/v. It can be extrapolated to  other fermented products and concentrations.

Between the bizarre conversion of ethanol and the wide array uses vinegar has acetic acid producing bacteria are interesting. This same  process also makes these bacteria resilient to sterilization.

This is also a waste of nearly any home that is good enough to be consumed. In any other case it is a reasonable solution to the alternative of wasting it.

This will need to be distilled at a later time to purify it and remove contaminates if not being used for cooking as is.
