Coquitos are small coconut cookies
Coquitos are small coconut cookies that are crunchy on the outside and soft in the middle with a hint of lemon. They are often seen in bakeries in Spain and they are really easy to bake.
It’s a great baking project that you can do with children. I’ll also show you a simplified way to shape the cookies that is suitable for kids.
Ingredients:
120g melted butter
225g desiccated coconut
60g flour
7.5g baking powder
3 eggs at room temperature
Grated rind of one lemon
Bake at 180° Celsius / 350° Fahrenheit for 20 minutes
Reduce heat to 160° Celsius / 325° Fahrenheit and bake for an additional 12 minutes
