Enjoy this sweet/dessert recipe in winter. Winter is not just about eating warm foods like soups and rice. Give this flavorful Maharashtrian recipe a try that has sesame seeds that are good to be consumed in winter. A bit crispy Tilgul Poli can be served hot or cold.  This is original, authentic, traditional Maharashtrian recipe. Main ingredients are jaggery or gudh or gul and sesame seeds/Til.

Preparation Time: 20 minutes
Cooking Time: 30 minutes
Ingredients for the Stuffing
• 1 cup Powdered Gul/Jaggery
• ½ teaspoon Cardamom powder
• 1/4th cup Sesame Seeds/Til
• 1 teaspoon Besan/Chickpea flour/Dalicha Peeth
• 1/8th cup Khaskhas
• 1 teaspoon Coconut Powder
• 1 teaspoon Clarified Butter/Ghee

Ingredients for the Dough
• 1 cup Wheat Flour
• ½ cup Maida/All Purpose Flour
• 1/8th cup Besan/Chickpea flour/Dalicha Peeth
• Water
• Oil

Recipe- Steps to Follow
1. Mix the flours together and make a soft dough.
a. Add water little by little
b. Knead it well
c. Apply Oil, cover it and keep it aside
2. Roast all the dry ingredients
a. Dry roast Sesame seeds/Til till they change the color
b. Dry roast Khaskhas/Poppy Seeds till they change the color
c. Dry roast Coconut Powder till it changes the color
d. Dry roast besa/Dalicha Peeth/Chickpea flour in ghee/clarified butter till it releases a nice aroma and changes color
3. Grind the roasted ingredients to a fine powder
4. Make the Stuffing
a. Take a bowl/plate
b. Mix grounder powder, jaggery and cardamom powder
c. Stuffing is ready
5. Making the balls with the stuffing
a. Take a small portion of dough and start spreading it with hands.
b. Once it spread enough, add double the stuffing than the size of the ball to it.
c. Cover the edges and stick them together to make a stuffed ball.
d. Roll with both the hands to your satisfaction
e. Stuffed ball is ready. Similarly make as many as you need.
6. Rolling the Stuffed Ball
a. Apply some dry flour to the stuffed ball and start rolling
b. Roll gently
c. Add more flour to the poli as you roll so that it does not stick to the rolling base
d. Roll all the stuffed balls similarly
7. Cooking the rolled Polis
a. Take a nonstick pan
b. Once the pan is medium hot, put the rolled poli onto it.
c. Cook it on one side well.
d. Flip and apply ghee. Cook on this side for few seconds.
e. Flip and apply ghee on to the first side as well.
f. Jaggery/Gull will start to melt.
g. Poli is ready
h. Similarly cook all the rolled polis
8. TilGul Poli is ready

Some Additional Information
• Sesame seeds/Til are good to be consumed during a cold/winter weather. They keep you warm.
• TilGul Poli taste better cold so make them ahead of time.
