Braised pork leg with pork sinew and sea cucumber | 海参猪脚

Chinese New Year Braised Pork with Sea Cucumber and Pork Sinew. Ah Pa has started to make a series of CNY videos for you all, so do stay tuned for more CNY videos.

Ingredients List:
1 kg of pork leg (front leg)
Sea cucumber in ½ of forearm length (approx. 300g, cut into big wedges)
200-300g of pig tendon (sinew)
Some Chinese leeks
2 tablespoons of rock sugar
1 big pot of chicken stock
Some fried garlic (add on at 17:12 in the video)
Some fresh corianders (to garnish)

Braised Ingredients:
(Fresh Herbs)
2 cloves of shallot, sliced
2 cloves of garlic
2 fresh coriander roots
2 stalks of spring onion, bottom white portion
Few slices of old ginger
(Spices)
1 bay leaf
1 cinnamon stick
2 star anise
1 dried orange peel
1 black cardamom
1 teaspoon of five spice powder

Seasonings:
3-5 tablespoons of light soy sauce
1 small bowl of Shao Hsing cooking wine
4-5 tablespoons of dark soy sauce
Pinch of salt
