Step-by-Step Sampling Procedure  

Step 1: Drawing the Right Sample in the Presence of Witness
In the first step, the responsible food safety officer calls for one or more witnesses at the time of sample collection. After the collection of the sample, the officer will go for direct witnesses in order to enclose their signature on the relevant forms as well as documents.  
Step 2: Notification in Form V-A to the Food Business Operator
If the food product has been drawn out from the supplier or manufacturer, a notification in Form V-A shall be conferred to them.

Step 3: Paying the Sample Cost  

The Food Safety Officer must make the payment for the sample to the concerned individual from whom the sample was taken. The cost should be computed at the rate at which sale takes place and the food item reaches the public.  

Step 4: Packing of Sample food item

The sample food item for testing must be put in clean as well as properly sealed containers in order to prevent the entrance of moisture. However, this condition isn’t applied to packaged food items.

Step 5: Affixing proper labelling to the sample

The sample must have proper labelling encompassing the information such as sample code, Date and place of the sample collection, name of the individual as well as the official designation, place of the collection and date, nature of the food item that will be tested, and quantity as well as nature of the preservative available in the sample.

Step 6: Sealing

The food sample ought to be classified into four parts & each part must be sealed as well as packaged via strong paper. The end points of the packaging material need to be folded & affixed. Furthermore, paper slips that entailed the overall perimeter of the container, enclosing the signature of the designated officer, should be affixed on the wrapper.  
The signature of the soul from whom the sample has been secured must be affixed in such a form that both the paper slip as well as the wrapper includes part of the thumb impression or signature.

Step 7: Dispatching of the Sample will take Place

The sample is dispatched in different ways.
• The sealed jar of one segment of the food sample, as well as the memorandum in Form VI, must be delivered to the Food Analyst.
• The second & the 3rd parts of the food sample, together with two copies of the memorandum in Form VI, should be routed to the Designated Officer.
• The fourth part of the sample, along with the copy of the memorandum in Form VI, must find its path to an accredited laboratory along with a standard fee.

Norms set by the FSSAI for recognition of food testing labs in India
1. The lab must be operated by staff members that are well-trained and well-equipped with the knowledge related to testing
2. The lab should belong to the class of the government-recognized facility such as FSSAI, NABL, or other agencies
3. The lab involved in testing under FSSAI should have a systematic quality management system
4. All the testing labs should have at least one food analyst who is well-qualified
5. The lab should be equipped with proper testing equipment as well as quality parameters
