In this video I'm showing you how you can make use of a pumpkin this fall season! We are making a flavorful and creamy roasted pumpkin soup with lentils that is completely vegan, and we are also making use of the seeds by roasting them! The seeds can be used as a topping for soups or salads, or being eaten as a snack (my favorite). Since the seeds are a bit wet before they are roasted they require no oil, but it's optional to use it anyway.
I can only write down the ingredients in the description as the instructions will fill up too much space, but you can find the full instructions on my recipe blog (you can also print it out from my blog for easy access).
Roasted Pumpkin Soup with Lentils (4 servings): https://www.nutritionbymichaela.com/m...
Ingredients:
100 g dried red lentils or more if you want even more protein
900 g pumpkin (I used Hokkaido) about 1.7 kg whole pumpkin
1 medium or ½ large onion
3-4 garlic cloves
2 tsp dried thyme
1/4 tsp ground black pepper
2 tsp herb salt or 2 vegetable bouillon cubes, or veggie stock powder
3-4 cups water (720-945 ml) depending on how thick you want the soup to be
The juice of ½ lemon

Optional: other spices of choice
Optional: avocado oil (not needed)
