Moong Gulgula Chaat:
Ingredients
Split green gram 1 cup soaked for 4 hours and grind
Salt ½ tsp
Crushed red pepper 1 tsp
Crushed coriander seeds 1 tsp
Crushed cumin seeds ½ tsp
Coriander leaves 2 tbsp
Green chilies chopped 4
Spring onion finely chopped 1 cup heaped
Baking powder ¼ tsp
Oil as required
Ingredients to Serve
Tamarind chutney ½ cup
Chat masala as required
Onion chopped 1
Yogurt whipped ½ kg
Caster sugar 2 tbsp
Sweet chili sauce 1 tbsp
Fresh coriander as required
METHOD
Soak lentil and grind finely into paste, add in all the dry seasonings with chopped greens and fry into small gulgulas till crisp and golden, keep aside.
TO SERVE
In a dish spread fried moong gulgulas, top with chutney, drizzle whipped curd, garnish with onion, green chilies, coriander, dash of chat masala and serve.
Honey Fried Chicken:
Ingredients
Chicken 1 with skin cut into 8 pcs
Vinegar 2 tbsp
Sambal oleak 1 tbsp
Chili garlic sauce 2 tbsp
Sweet chili sauce 2 tbsp
Black pepper ½ tsp
Garlic paste 1 tsp
Salt 1 ½ tsp
Egg 1
Flour 3 tbsp
Corn flour 3 tbsp
Self raising to coat as required
Ingredients for Honey Sauce
Sambal oleak 1 tbsp
Honey 4 tbsp
Lemon juice 2 tbsp
Sweet chili sauce 2 tbsp
Chili garlic sauce 3 tbsp
Mayonnaise 2 tbsp
METHOD FOR HONEY SAUCE
Mix all together.
METHOD FOR CHICKEN
Marinate chicken with all the given ingredients for 1 hour, roll in self-raising flour to coat well, deep fry in hot oil on medium flame for 20 mins, serve drizzle with honey sauce.
Jhatpat Cutlets:
Ingredients
Potatoes boiled and mashed 2 cups
Chicken fries 1 packet
Salt 1 tsp
Green chilies 4 chopped
Coriander leaves chopped 2 tbsp
Onion 1 grated and squeezed
Corn flour 2 tbsp heaped
Black pepper 1 tbsp leveled
Crushed red pepper ½ tsp
Eggs to beaten
Siracha sauce 1 tbsp
METHOD
Boil and mash potatoes, add in it all the remaining ingredients, mix well, make desired shape, dip in egg and corn flour, mix together, shallow fry till light golden, serve with sweet chili sauce.
