These were a bit bizarre - I first tried them fresh out the oven and they tasted like what we call in the UK "Lardy Cakes" (my Dad said they were like bread pudding without the bread or fruit).
Basically, they were soft and fatty and not like I was expecting at all, nice but not what I had intended to make texture wise.
But once they cooled down? They suddenly transformed into the cinnamon rolls I was anticipating - thick and full of a lovely cinnamon flavour.
So basically ... I HIGHLY suggest you leave them to cool completely before writing them off as a failure.

| The Recipe |

DOUGH INGREDIENTS:
- 1 cup (113g) Mozzarella, shredded
- 1.5oz (43g) Cream Cheese
- 1 large Egg
- 1/2 tsp Vanilla Extract
- 1/2 cup (64g) Coconut Flour
- 1/4 tsp Xanthan Gum
- 1 & 1/2 tsp Baking Powder
- 2 tbsp Sweetener (I used Erythritol)

FILLING INGREDIENTS:
- 1/8 cup (28g) Butter, melted
- 1/8 cup (23g) Sweetener, preferably a brown sweetener (I used Sukrin Gold)
- 1 tsp Cinnamon, dried

FROSTING INGREDIENTS:
- 2 tbsp & 1 tsp Sweetener, preferably powdered (I used powdered Erythritol)
- 2 tbsp Double/Heavy Cream

METHOD:
1. Preheat the oven to 200c/400f.
2. DOUGH: Combine the mozzarella and cream cheese in a large microwave safe bowl and place in the microwave for 30 second increments, stirring in between, until melted.
3. Add the remaining dough ingredients, I suggest you add the egg first, mix it a little bit then add all other ingredients, incorporate as much as possible with utensils or your hands.
4. Place the dough on a piece of parchment/greaseproof paper, top with another sheet (I add a little bit of almond flour to make it easier as the dough is a bit sticky). Roll into a sheet about 1/4 of a inch thick. Remove the top sheet.
5. FILLING: Combine the melted butter, sweetener and cinnamon and mix well. Spread 3/4 of the filling across your dough.
6. Roll the dough into a log, cut into slices and place the slices in a greased pie/casserole dish. Use remaining filling mixture to spread over the top of the rolls.
7. Bake for 18 minutes.
8. Whilst they are baking, make the FROSTING: Add the frosting ingredients into a small bowl and mix until well combined.
9. Once rolls are hot out of the oven spread the frosting over the tops of the rolls. Leave to cool COMPLETELY and enjoy!
